Tofu brings magic happy!
Inspired once again by my Simply in Season cookbook, I ventured into the soyful world of tofu last week. Many turn up their noses at the mention of tofu – without trying it, they dismiss it on account of its appearance, texture (actually my favorite part), and naturally bland taste. Well if the appearance of a block of gelatinous tofu gives you the willies, try imagining it next to a clump of oozing raw ground beef or a freshly thawed chicken breast bathing in its own juices. Yummy.

There are all kinds of ways to incorporate soy products into delicious dishes as a great source of protein. The cool thing about tofu is that it naturally sucks up the flavors of the foods and seasonings it’s cooked with. And what better way to fill it with flavor than to marinate? This recipe offered a marinade in which to soak the tofu slices and vegetables overnight. Ideally, I would have grilled them to get rid of more of the oil, but with no grill available, I stir-fried it all instead. My housemates approved.
